Worth it after a single use
I had been told that sous vide is the way to truly get great meat, and I finally got around to giving it a go. I have used this once so far, but it has absolutely proven itself to me already. Cleaning out the freezer, we came across a choice New York loin roast that had been there for a while. We almost certainly bought it around Thanksgiving, but whether that was last Thanksgiving 9 months ago, or the one before it, we don't know. So basically a decent but not spectacular cut of meat that had been around a long time. We figured if we could get a good result out of it, then we would be sold. Well, we did the roast for 30 hours, then pulled it out and seared every side. Slicing into it, the whole thing was nice and rare, just as we like it. It had picked up a lot of flavor from the herbs and garlic we put in the bag, and it was really good. Not the best roast I had ever had, but certainly way better than the cut should have been. Then came the sandwiches. I thin sliced that sucker, and we made French Dips and cold roast beef. I made a cold roast beef sandwich with just a touch of mayo and mustard, some lettuce and pickles, and a pile of the roast beef. It was, no doubt, the best roast beef sandwich I have ever had. The meat was just so incredibly tender. If you want to upgrade your meat game, this is a great, easy way to do it.

A perfect small Sous Vide utensil
I used this with my Power Pressure XL bowl to cook two chicken breasts and a small boneless pork chop. It was much more convenient that using the big pot and my bigger Anova machine. 140 degrees and 2.5 hours later I’ve got three perfectly cooked juicy pieces of meat for my jambalaya. When it was done I checked the water temp of Anova’s reading with my thermometer - there was a .2 degree variance. Not bad. Not bad at all!

Like it!
I decided on this new model because 1.) old model was on backorder and 2.) old model had condensation issues that I hoped would be resolved. I’ve used this three times now and so far, so good. Because it’s only 750 watts it’ll take longer to get up to temp, but apparently that’s the trade-off for the smaller size. It took 30 minutes to go from cold tap water to 130 degrees. However, if you start with hot water you get there much more quickly. Really enjoying this cooking process.

Cooking on a whole new level
Since I started cooking sous vide my family says my cooking has gone to a new level. I started with the original Anova and just recently picked up the nano. The nano is awesome because it's much smaller vs the first anova making it easier to store in a drawer or something. It sounds trivial but by making it easier to grab I'm more likely to use it vs the anova which I kept in a special case in the pantry. I have given up cooking in the rubbermaid container with the silly lid and now just cook in a stockpot with this silicone lid from cellar made. Setup is so much quicker and I can cook a beef roast for 30 hours without adding ANY water. If you're just starting out in sous vide I recommend this cooker. Don't worry about wifi or bluetooth - you don't need it, it's over complicated.

No need to read the instructions: plug it in, press + to set the temp and press go.
I love product design which is intuitive. The bottom of the face of the unit has a big plus and minus and a play / pause button. I attached it to the side of the pot, filled the pot with hot water, set the temp and hit the play button and it started up. No messing around with Wifi or Bluetooth. That's how easy it was to cook my steak today to a perfect 127 degrees. Tomorrow is pork tenderloin to 140... Did I say how quiet it is? Its very quiet. This is off to a great start!

Not as good as the previous version
The Anova Nano is easy to operate manually or through the Anova app. I have used it to cook ribeye steak, chicken breast, and hamburgers, and the moisture content is a big difference. However, connecting to the Nano through Bluetooth required that I disconnect another Nano device that I had connected. The picture shows a flaw in the current Nano in that the height cannot be adjusted. A standard stock pot that is 5 inches tall or below would not be ideal as the securing mechanism is at 5 inches. I highly suggest ordering the Cellar Made Sous Vide Orange Lid as it fit the Nano and the stock pot perfectly. Note that this applies to the newer version of the Nano (all black). Another difference is that the previous Nano is 800 watts and this version is 750 watts. Overall, I am very pleased with the Nano as the food comes out perfectly cooked at whatever temperature I want.

Both of them are amazing based on my experience goes with the sous vides
I have been waiting for this almost a year. I used both the previous model and this one. Both of them are amazing based on my experience goes with the sous vides. It is very easy to use and looks so fancy. Good job Anova!

Why did I wait so long to get this???
Even with several friends telling me that sous vide is "The Way" to cook, I resisted buying a unit for more than 2 years. Now I have it, I wonder what lack of thoughts were going through my mind. This is a wonderful and nearly foolproof way to cook. I've tried Porterhouse and NY Strip steaks, pork chops and pork tenderloins, chicken breasts and thighs, and even hard boiled eggs. The only slight fail were the eggs. A reference I found online gave a temperature that is at least 7-10 degrees too cool to actually set the eggs fully. Everything else came out perfectly cooked to the degree of doneness desired. The only trick is that you need to brown the outside AFTER you cook things, not before. This adds flavor and color and slightly stiffens the outside of the neat so it holds its shape. it is also great to have a vacuum sealer to get all the air out for better submersion and cooking. This ANOVA unit is relatively small and lightweight making it fit just about every pot I want t use it in. The water heats up in minutes to the selected temperature and then holds things right there as long as you want it to. A trick, mentioned online, to keep some of the water from evaporating, is to buy enough ping pong balls to cover the surface. They are available in quantity on Amazon.

Dead on! Thermapen Test.
The photo says it all. I put this ANOVA NANO to the test with the leading name in thermometers, the Thermoworks Thermapen. ANOVA advertises +/- 0.2°F precision and they delivered. When placing the Thermapen probe directly beside the output of the ANOVA, you see the exact same temperatures as the ANOVA display to the tenth of a degree. The temperature never fluctuates beyond 0.2° in our 12" stainless steel try ply pot. I highly recommend this sous vide cooker. Insta @TheUnfinishedKitchen

Great addition to our kitchen
I had been sitting and thinking about buying a sous-vide for about a year and finally decided to take the plunge. I try to not buy tools that will just sit in my kitchen taking up space. Well, this thing has not been taking up unnecessary space so far. I've had the Anova Sous Vide about a month now and I've been using it a few times a week. What I really like about this is that I can just look up a recipe in the app on my phone, throw the meat into a ziploc bag, push the start button and forget about it. I haven't had too much trouble using ziploc bags. I use the water immersion technique to help get out air from the bag and it works for the most part. But it's not perfect and I end up going through a lot of ziploc bags. So even though a vacuum sealer is not required, if you use this often enough you're probably going to end up buying one. My only regret is that I purchased the bluetooth one instead of the wireless version to save a few bucks. I think the wireless one would make it easier to keep updated of how much time is left when I'm not within bluetooth range and also adds the ability to link with my Amazon Echo.
